What is kitchen food waste?

Kitchen waste is also known as "pre-consumer food waste."  it's the food that goes to waste while under the control of the foodservice operator.  This food includes overproduction, spoilage, expiration, trimmings, burned items, catering leftovers and contamination.  It does not include food left on guest plates (which is known as "post-consumer food waste").   Kitchen waste is controllable and, by reducing it, can lead to significant food cost savings and green benefits (less food in landfills!).
